Definitely my "fast food" happens in the Instant Pot. Ethiopian lentil soup and corn bread is our favorite. And that blue jelly roll is just too lovely to pass up an opportunity to win it.

ReplyDeleteMy quick Go To dinners are spaghetti and meat sauce (browned chopped chuck added to canned tomatoe sauce). Or macaroni and cheese with carrots and green beans in the center.

ReplyDeleteI have a couple go-to fast foods. If the hubs or I am in town (which is 40 miles away) and we're going to be tight on time for dinner, we'll stop and pick up a rotisserie chicken from the market. That'll give us at least 3 full meals. At home, I'll head to the freezer: we

My go-to is fast food. I'd be lying if I said I would cook with multiple schedules to juggle.

ReplyDeleteOne of our fast dinner favorites is a dish I call taco stuff. And no matter if everyone can’t eat at the same time it keeps. It’s like a one dish taco and you eat it with chips on the side. Everyone in our family loves it.
ReplyDeleteI grind or chop eggplant, cook it in a pan with a little olive oil, then freeze it. When I have to cook a meal in a hurry, I take it out of the freezer and make spaghetti sauce (adding tomato, onion and spices).

ReplyDeleteBurritos--Can of no-fat refried beans, tortillas, taco sauce, and shredded cheese. Open can of beans, spread a layer either down the middle of the tortilla or a thinner layer over the entire tortilla; drizzle or spoon taco sauce over the beans, add cheese over the taco sauce, roll up the tortilla and microwave for 1-2 minutes. Optional: (1) add shredded lettuce &/or onions on top of the cheese. (2) Add more taco sauce and cheese over the top of the rolled up tortilla for a wet burrito.

ReplyDeleteWhen I need a quick meal I turn to my Instant Pot. Look for a recipe with whatever ingredients you have on hand or want to use and it'll be ready in short order.

Lit'l Smokies that can be warmed up in the Microwave, instant flavored mashed potatoes (for example Applewood Smoked Bacon and Cheese Instant Mashed Potatoes or Sour Cream and Chives Instant Mashed Potatoes), frozen mixed vegetables. We usually cook in the microwave first the instant potatoes and keep them covered while the Lit'l Smokies warm up. We cook the frozen mixed vegetables on the stove and start them first before anything else. Everything is done in less than 20 minutes or less. For dessert give them each a little container of pudding or little container of jello you can buy at the store. Note if we don't have instant potatoes for a help on busy nights we usually have some Minute Rice to use instead. Also if we don't have some Lit'l smokies on hand we often have already cooked Ham steaks on hand in the freezer and they can be warmed up pretty quick in the microwave as well. Fairly easy to swap out another vegetable for the frozen mixed vegetables, like frozen broccoli or frozen California Blend Vegetables.

ReplyDeleteFor a fast meal I keep frozen chicken wings or frozen cod fillets in the freezer. Depending on how DH is feeling, we will have wings, fries, steamed broccoli or Fish Burgers, fries and a spinach salad with homemade Bragg Dressing or grilled cheese sandwiches with tomato soup.

Quesadillas are fast and healthy for us here! I usually add chicken and any veggies I have on hand with some light cheese and voila! Dinner is served in 10 minutes.

ReplyDeleteMy favorite fast dinner is meatballs -- with spaghetti or on a roll. I form the meatballs ahead of time and freeze them uncooked but ready to go. When I need them, I just take what I need and cook them from frozen either in my crock pot if I have planned ahead or on the stove in a frying pan. Perfectly easy and fast.

ReplyDeleteWe love "make your own burrito" night. I keep pre-cooked and pre-seasoned hamburger in the freezer. Warm the meat and a can of refried beans in the microwave, put out a plate of topping choices (cheese shreds, olives, diced tomato and onion, a sack of lettuce shreds, and a jar of salsa). Roll your favorites in a large warm tortilla and everyones happy !
